// WHY VINE-RIPENED MATTERS

What ripening builds.

Colour and nutrition are the same process. As a tomato ripens on the plant, chlorophyll breaks down, sugars and aromatic compounds accumulate, and lycopene rises sharply—giving the fruit its red colour and much of its antioxidant value. Tomatoes allowed to fully ripen on the vine develop significantly more vitamin C and lycopene than fruit picked green, with sugar content and flavour compounds following the same curve.
